The following are some samples of the fare we serve our guests:

Breakfast: Crème Brule French Toast, Asparagus and Goat Cheese Frittata, German Apple Pancakes, Croissants, Smoked Salmon and Avocado Scrambled Eggs, Soufflé Omelets with Fine Herbs

Lunch: Arugula Salad with Crab Cakes, Sweet and Spicy Beef Fajitas,  Caribbean Jerk Chicken, Shrimp Filled Avocado, Cheeseburgers in Paradise, Salade Nicoise, Pomegranate Glazed Country Style Ribs 

Hors D’oeuvres: Panko Crusted Scallops, Pistachio Feta Crostini, Grilled Pears and Gorgonzola, Sun-Dried Tomato Tartlets

Dinner: Mahi-Mahi with Brown Sugar Soy Glaze, Pineapple Shrimp Skewers, Orange Glazed Pork Tenderloin, Macadamia Encrusted Grouper, Coconut Curry Chicken, Beurre Blanc Salmon, Béarnaise Filet Mignon

Guests often choose "al fresco" au natural dining in the spacious covered cockpit. Each meal is prepared by the real "naked chef" with flavor and presentation. Gourmet foods, fine wines and exotic drinks are always on the menu.
